This is my first time making a Bellini and it turned out quite well! The peaches I got were a bit tart so I added a splash of simple syrup to make the purée sweeter. I used a Non-Alcoholic Sparkling Brut from Fre Wines which worked great with the peach. It tasted like the real thing! If this is not available in your area, you can substitute it with Diet Ginger Ale.
To make the purée, just put the peeled fresh peaches into a food processor and add a splash of simple syrup to make it sweeter. Pulse it until you get a consistency where it is a bit runny. One small peach + simple syrup makes about 4 oz of peach purée.
Ingredients:
- 2 oz peach purée
- 4 oz non-alcoholic sparkling brut OR diet ginger ale
Instructions:
- In your shaker glass, add the peach purée and the non-alcoholic sparkling brut
- Very gently “roll” the ingredients by slowly transferring the mixture from your shaker glass to the shaker tin and vice versa. Repeat until the ingredients are well-combined
- Serve in a champagne flute
