Absinthe is an anise-flavored spirit that comes with a lot of urban legends. Remove the alcohol and you’re left with this nice licorice flavor. This is my non-alcoholic take on the cocktail with an interesting name. Since it is non-alcoholic, I doubled the Absinthe to really highlight the licorice flavor and also make it more green. Thanks @lyresspiritco for making a non-alcoholic version of this not-so-common but a must-have spirit!
Ingredients:
- 1 sugar cube (or 1 oz simple syrup)
- 2 oz Non-Alc Absinthe
- 4 oz Non-Alc Champagne
Instructions:
- In a nice coupe glass, add the sugar cube, pour the non-alc absinthe and non-alc champagne over the sugar cube.
- Gently stir until sugar cube is fully dissolved.
