Pink Peppercorn Mezcal Paloma

I’ve always wanted to do something with pink peppercorn ever since I had a pink peppercorn margarita. I decided to make a syrup with it. Pink peppercorns are not as spicy as black peppercorn and it is slightly sweet. I mixed it with @drinkmonday ‘s Mezcal which worked really well, the smokiness of the Mezcal and the subtle spice of pink peppercorns are a great combo! Instead of using grapefruit soda, I used fresh grapefruit juice and sparkling pink grapefruit from @fevertree .

Pink Peppercorn Syrup

  1. Combine 1/2 cup of water, 1/2 cup of sugar, and 1 tbsp of pink peppercorn in a saucepan. 
  2. Let boil, reduce heat, simmer for 30 minutes.
  3. Let cool then store in an airtight container.

Ingredients:

  • 2 oz @drinkmonday Zero Alcohol Mezcal
  • 2 oz fresh grapefruit juice
  • 1 oz pink peppercorn syrup
  • 0.5 oz lime juice
  • 3-4 oz Sparkling Pink Grapefruit

Instructions:

  1. In a cocktail shaker, combine zero alcohol mezcal, grapefruit juice, peppercorn syrup, and lime juice.
  2. Add ice then shake for 10-12 seconds.
  3. Strain into a highball glass filled with ice.
  4. Top with Sparkling Pink Grapefruit.
  5. Garnish with a grapefruit slice.
