Fig & Rosemary Ginless G&T

Quench your thirst with this tasty spin on Gin & Tonic. A friend of ours gave us some figs and asked if I could make a mocktail with it. Decided to make a fig syrup and use the syrup in a G&T and it turned out quite nicely.

To make the syrup, heat 1/2 cup water, add 1/2 cup sugar, and let it dissolve. Add 4 figs (chopped). I threw in some dried juniper berries as well for that gin flavor (optional). Simmer it for 10 mins. Add 2 sprigs of rosemary. Simmer for 5 mins more. Turn off heat then let cool.

Ingredients:

  • 1 oz fig & rosemary syrup
  • 0.5 oz lemon juice
  • 1.5 oz non-alcoholic gin (optional)
  • Tonic water

Instructions:

  1. In a highball glass, put ice and add a few slices of figs
  2. Add fig & rosemary syrup, lemon juice, and non-alcoholic gin
  3. Top with tonic water
  4. Garnish with a rosemary sprig
  5. Mix before drinking 😉
